Effect of Postharvest Application of Ethephon , Ethylene and Methionine on Color and Quality of Satsuma Orange Fruit (Citrus unshiu Marc.)

Abstract
To accelerate the yellow color development and to improve the quality of Satsuma orange, green fruits were treated with methionine, ethephon, and ethylene. Methionine had no effect on color development. Ethephon had significant effect on developing yellow color; with 250ppm treatment the fruit was remarkably colored in 5 days and fully colored in 8 days. With ethylene 1,000ppm the yellow color was much developed in two days. Chlorophyll content in fruit peel decreased as the color was developed. In ethephon treatment spraying was more effective than dipping for color development, and less color fruits showed more color development than much colored fruits. With the artificial coloring the fruit quality such as soluble solid and total acid content was not affected. This data seemed to suggest that artificial coloring with ethephon, or ethylene could be practically applied to fruits which had matured flesh but poorly colored peel.
